Curry chicken is a flavorful and hearty dish with many variations across different cuisines. Here's a basic step-by-step guide to making a simple and delicious curry chicken.

Ingredients:
1.5 pounds (680g) of boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
2 tablespoons vegetable oil
1 large onion, finely chopped
3 cloves garlic, minced
1-inch piece of fresh ginger, minced
2 tablespoons curry powder (adjust to taste)
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon chili powder (adjust to taste)
1 can (14 ounces) diced tomatoes
1 can (14 ounces) coconut milk
Salt and pepper to taste
Fresh cilantro leaves for garnish (optional)
Equipment:
Large skillet or pan
Wooden spoon or spatula
Step 1: Prepare the Chicken
Cut the chicken into bite-sized pieces. Season with salt and pepper.
Step 2: Sauté the Onion, Garlic, and Ginger
Heat the vegetable oil in a large skillet or pan over medium heat.
Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
Add the minced garlic and ginger, and cook for another 1-2 minutes until fragrant.
Step 3: Add the Spices
Stir in the curry powder, ground turmeric, cumin, ground cumin, ground coriander, and chili powder.
Cook the spice mixture for about 1-2 minutes, stirring constantly, until it releases its aroma.
Step 4: Cook the Chicken
Add the seasoned chicken pieces to the skillet and cook, stirring frequently, until they're browned on all sides. This usually takes about 5-7 minutes.
Step 5: Add Tomatoes and Coconut Milk
Pour in the diced tomatoes and coconut milk.
Stir well to combine all the ingredients.
Bring the mixture to a simmer.
Step 6: Simmer
Reduce the heat to low, cover the skillet, and let the curry chicken simmer for about 20-25 minutes, or until the chicken is cooked through and the flavors have melded.
Step 7: Adjust Seasoning
Taste the curry and adjust the seasoning by adding salt, pepper, or more curry powder to suit your taste.
Step 8: Serve
Serve your curry chicken hot over cooked rice or with naan bread.
Garnish with fresh cilantro leaves if desired.
Enjoy your homemade curry chicken! You can adjust the level of spiciness by adding more or less chili powder or using a milder curry powder if preferred.
